Ironic Cafe's savoury scones

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

3 cups self-raising flour
3 cups grated cheese
4 tomatoes, diced
1 cup fresh spinach leaves
3 red onions, diced
2 tsp mustard powder
2 tsp curry powder
1 tsp cayenne pepper
salt and pepper
2 cups milk

Grease an oven tray.

Mix the flour, flavourings and cheese in a bowl. Stir in the milk until just mixed. Turn on to a floured bench and knead briefly.

Shape into a log 5cm thick. Cut into squares. Place on greased tray and bake at 175degC-200degC for about 20-30 minutes until cooked.

Note: If the mix is too wet, the scones will sink. Add more flour if needed.

Do not overmix or the scones will be gluggy.
