Howl at the Moon’s seafood chowder

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

80g (approx) butter
80g (approx) flour
600ml (approx) milk
20g (approx) seafood stock powder
seafood mix to taste (such as prawns or marinara mix)
half carrot diced
half onion diced

Optional
cream

Method

Melt butter in large pot, add flour, mix and cook flour, but don't brown.

Add onion and carrot, slowly add milk and stock powder.

Whisk to remove lumps.

Add seafood. Cook until seafood is tender.

Thin with cream if needed.
