RECIPE: Centennial Court fudge pudding

Karen Hitchcock, food and beverage manager of Centennial Court Motor Inn, in Alexandra reveals the secrets of their fudge pudding.

Centennial Court fudge pudding

1 cup flour
2 tsp baking powder
salt (about 1/4 tsp)
2 Tbsp butter
2 Tbsp cocoa
1/2 cup milk
3/4 cup brown sugar
1/2 tsp vanilla essence

Topping:
1/2 cup brown sugar
2 Tbsp cocoa
1/2 cup sugar
1 1/2 cups boiling water

Sift flour, baking powder and salt. Melt butter and cocoa.

Add milk and sugar and pour into flour. Add vanilla and mix. Put into a baking dish.

Topping: Mix the two sugars and cocoa and sprinkle over the mixture.

Pour over the boiling water carefully.

Bake at 180degC for 40 minutes.
