RECIPE: Lemon fudge slice

This week: Red Brick Cafe's lemon fudge slice

250gm very soft butter
¾ cup castor sugar
1 egg
grated rind of 1 orange
1 tsp vanilla essence
2½ cups flour
2½ tsp baking powder
1 cup lemon curd
2-3 Tbsp passionfruit pulp

In a bowl or food processor, beat together the butter, castor sugar, egg, orange rind and vanilla essence until creamy and well mixed.

Add flour and baking powder, stir or pulse to mix well.

Spread ⅔ of the mixture in the base of a well greased and floured 23cm loose-bottomed cake tin. Mix together the lemon curd and passionfruit pulp and spread over the dough.

With floured hands dot the remaining dough over the top.

Bake at 190degC for 40 minutesWhen cool, dust with icing sugar
