Apple pillows

These airy apple cookies reminded me of little pillows. They are light and delicate in texture with a comforting apple pie flavour. They are simple and quick to prepare and I like to finish them off with a little icing.

Ingredients

85g butter, softened

100g white sugar

100g brown sugar

1 egg

180g standard flour

¾ tsp baking soda

½ tsp mixed spice

½ tsp ground cinnamon

½ tsp ground ginger

¼ tsp salt

1 medium apple (180g), peeled and coarsely grated

Icing

¾c icing sugar

½ tsp ground cinnamon

Method

Preheat the oven to 180°C.

Line two baking trays with baking paper.

Cream the butter and sugars together until light and creamy.

Add the egg and beat well to combine.

Add the sifted flour, baking soda and spices and mix to combine.

Add the grated apple and stir gently to combine.

For best results sit the mixture in the fridge for 30 minutes to allow the dough to firm up.

Roll into walnut-sized balls, allowing space in between.

Bake for 18-20 minutes.

Remove and cool.

To make the icing, combine the icing sugar and spice together in a small bowl, add ½ tsp hot water and stir well. If too thick add drop by drop of water to loosen.

Drizzle over the biscuits, enjoy.
