Diggers Tavern potato and bacon soup

Serves 4

Ingredients
1 Tbsp crushed garlic
1 medium onion, sliced
1 carrot, grated
1 celery stalk, sliced
1 spring onion, sliced
10 rashers streaky bacon, sliced
10 potatos (Nadine worked best), peeled
1-1½ litres of chicken stock
½ cup sour cream
½ cup cream
1-2 Tbsp of sweet chilli sauce

Method
1. Sweat onion, garlic, carrot, celery, spring onion and 6 rashers of the bacon in a good soup pot for about 5min, add potatoes and chicken stock and bring to boil.

2. Simmer the potatoes uncovered for 40mins (depending on size of potatoes) or until soft. Stock should have reduced a bit.

3. Remove off heat and blitz altogether with a stick blender, seasoning and adding the sour cream and cream.

4. Cook the remaining bacon in the oven, ensuring you get a nice crispness. Add crispy bacon to the blitz soup, add the bacon juice (good flavour) and stir.
