Obsess Cafe's fruit loaf

Makes 2

Method
Line two loaf tins with baking paper.

Heat oven to 160degC

250g butter
4 cups sultanas
3 cups sugar
4 cups water

Bring to a boil and simmer for 5 minutes. Leave to cool.

6 cups flour
6 tsp baking powder
4 tsp baking soda
8 tsp cinnamon

Sift together in a large bowl.

Mix wet mixture into dry and divide into two loaf tins.

Bake for about 1 hour and 15 minutes.
