Ask a chef: Good Oil's savoury muffins

Good Oil's savoury muffins
Makes about 20

Ingredients

6 eggs, lightly beaten
1 tsp salt
½ cup canola oil
½ cup tomato pesto
6 cups mild cheese, grated
3 bunches spinach, chopped
6 tsp baking powder
6 cups flour
5 cups milk

 

Method

Put all the ingredients into a bowl and mix carefully from the outside, folding in towards the centre until the flour is mixed.

Don't overmix.

Pour the mixture into greased muffin trays and bake at 190degC for about 25 minutes.
