Ask a Chef reveals the secrets of Sailz' pumpkin cheesecake.

Base:

2 pkts plain biscuits
200g butter

Filling:

700g cream cheese
3/4 cup sugar
800g roasted pumpkin
1 1/4 tsp cinnamon
1/2 tsp ground nutmeg
tsp salt 2 eggs Topping : 2 cups sour cream 2 Tbsp sugar 1 tsp vanilla  

To make the base:

Crush biscuits in a blender, add melted butter, process briefly then press into springform or loose-bottom tin.

Chill.

To make the filling:Beat cream cheese and sugar together; beat in pumpkin, cinnamon, nutmeg and salt.

Continue beating and add eggs one at a time.

Pour on to the set base.

Bake at 180degC for 50 minutes.

To make the topping:

Beat sour cream, sugar and vanilla together.

Pour over cheesecake and bake for a further 5 minutes.
