Nichol's Garden Cafe's curried cauliflower soup

Ingredients

2 onions, roughly chopped
4 garlic cloves, roughly chopped
50g butter
1 Tbsp curry powder
2 Tbsp cumin seeds
1 Tbsp garam masala
1 tsp wholegrain mustard
1 tsp ground turmeric
¼ cup sweet chilli sauce
1 head of cauliflower, roughly chopped
1 red pepper, roughly chopped
water to cover
½ Tbsp salt (more if needed)
100ml cream
fresh coriander, chopped

 

Method

Sweat the onions and garlic in butter until soft. Add all spices, stir and cook for 1-2 min. Add red pepper and cauliflower.

Cover with water and bring to the boil then reduce to a simmer. Simmer for 30mins or until the cauliflower is tender.

Blend soup, add cream, salt and fresh coriander.
