2kg diced pumpkin
4 cloves garlic, finely chopped
1 whole long red chilli, seeded and chopped
1 thumb ginger
1 Tbsp cumin seeds
1 Tbsp coriander seeds
1 Tbsp fennel seeds
2 red onions, sliced
1 tsp smoked paprika
2 litres vegetable stock
Saute garlic, chilli and ginger in oil for two minutes.
Add seeds and cook another minute.
Add red onions and smoked paprika and cook until onions are soft.
Add pumpkin and vegetable stock and simmer for 40 minutes.
Blend and season to taste.
