Ask a chef: Vudu's banana bread

Ask a chef reveals the secrets behind Vudu's banana bread.

250g butter
6 bananas (as ripe as possible)
4 eggs
3 1/2 cups flour
3 1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup dessicated coconut
2 cups sugar

Preheat oven to 160degC.

Grease and line two loaf tins (10cm by 25cm).

Put all dry ingredients in a big bowl.

Soften butter in a pot, add the mashed banana and continue to melt butter.

Beat eggs one at a time into the slightly cooled banana mixture.

Add the wet mix to the dry ingredients and combine gently.

Pour into the prepared loaf tins.

Bake for about 50-55min or until a skewer comes out clean.

Serve warm with butter.
