Topiary Cafe's beetroot and tomato soup

Ingredients
3 red onions, diced
4 garlic cloves, crushed oil
2 cans of chopped tomatoes
1kg beetroot, peeled, diced and roasted
4 Tbsp cumin
salt and pepper to taste
1 litre of vegetable stock
brown sugar to taste

Method
Saute onion and garlic.

Add cumin and saute until fragrant.

Add beetroot, tomatoes and stock.

Cook for 30 minutes.

Check seasonings and add if needed.

Garnish with sour cream.
