Tin Goose Café's coffee walnut muffins

Ingredients

250g butter
¾ cup sugar
4 eggs
4 Tbsp coffee
about 1 cup milk to mix
4 cups self-raising flour
1 cup walnuts
1 tsp vanilla essence

For topping:

1 Tbsp coffee
2 Tbsp brown sugar
2 Tbsp walnuts

 

Method

Cream butter and sugar, add eggs, coffee and vanilla. Add self-raising flour and milk and mix to a sticky consistency. Add walnuts. Place in 8 large Texas muffin tins.

Mix topping ingredients together and place on top of muffins.

Bake in 180degC oven until cooked.

Sprinkle with icing sugar.
