Leafy greens are among the most nutritious vegetables and the Canadian food writer uses them in some enticing plant-based recipes such as salads, main meals and smoothies, but also in cakes: spinach in brownies, courgettes in oatmeal cookies, avocado in toppings and beetroot and its greens in chocolate cake.
