On September 25, staff and patrons were evacuated from the pub about 1pm when a fire broke out in the kitchen, and spread throughout the building's roof.
Within days of the blaze, insurance assessors and fire safety investigators examined the building, which suffered structural and smoke damage.
Yesterday, Mr Gillespie had still not heard whether it would have to be demolished or how long it would be before the damage could be cleared and reconstruction could begin.
"We are just waiting in limbo and it's very frustrating. The pub is still exactly the way it was when it went on fire. We are not allowed to touch anything until we get the all-clear."
A garden bar has been set up in the outdoor area of the pub, and to date local patrons have been supportive of the arrangement.
"The local community has been great. They still come here for a drink and barbecue food," Mr Gillespie said.
