Steam Cafe’s meat-free mince

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

1 medium-sized brown onion

500g mushrooms

300g spinach

400g can organic black beans drained (keep

juice aside)

1 Tbsp garlic

½ cup soy sauce

⅓ cup balsamic vinegar

1 Tbsp cornflour

Method

Finely dice your onions and saute them in a large pan until softened, then add finely diced mushrooms, garlic and spinach. Cook until softened and add your black beans, balsamic vinegar and soy sauce. Stir gently until brought up to temperature.

Mix cornflour and cold bean juice together until well blended and add slowly to mixture while stirring continuously until thickened. Remove from heat.

This mixture can be used to make a family-sized pie or individual pies. You can also top them with mashed potato for a complete and filling meal. Or you can use it in wraps with salad and sweet chilli sauce.

Vegan pies can be made using layers of filo pastry brushed with olive oil.
