Watson's Eatery's potato salad

Ask a Chef reveals the secrets of those superb dishes you ate in cafes and restaurants and wanted to try yourself.

Serves 4

1.5kg Agria potatoes
300g corn kernels
200g roasted red peppers, sliced
4 gherkins, diced
1 Tbsp wholegrain mustard
1 Tbsp gherkin relish
handful of chives or parsley, cut finely
150ml vegan mayonnaise or aioli
small red onion, finely diced
salt and pepper

Cut potatoes in half.

Add to a pot filled with cold water and a pinch of salt and bring to boil. Reduce heat and simmer until potatoes are cooked through, about 25-30 minutes.

Drain and leave to cool.

Mix together in a large bowl the rest of the ingredients.

Once potatoes are cool, cut into bite-sized pieces and add to the bowl.

Mix gently and then put in a serving bowl.
