Plum cake

Plums always make the perfect accompaniment to cakes, as they add moisture and are loaded with flavour. This is another of my favourite recipes.

Serves 10

Ingredients
1 cup flour
½ cup ground almonds
2 tsp baking powder
¼ tsp salt
½ cup oil
1 large egg
½ cup milk
1 orange, zest and 1 Tbsp juice
1 cup sugar, plus 2 Tbsp
10 plums (any variety), halved and stones removed
¼ cup sliced almonds
2 Tbsp butter, melted

Method
Heat the oven to 180degC.

Lightly grease and line a 18cm-20cm springform cake tin.

Prepare the plums, by cutting in half and removing the stones. Set aside.

Whisk together the dry ingredients in a large bowl.

In a separate bowl whisk together the oil, egg, orange juice and zest and 1 cup of the sugar until well combined.

Fold through the dry ingredients and mix gently until just combined.

Pour the batter into the prepared cake tin and arrange all the plums cut side up on top.

To make the topping
Melt the butter and mix through the sugar and sliced almonds.

Dot this mixture over the top and bake the cake for 35-45 minutes or until a skewer comes out clean.

Cool in the tin for 10 minutes, then remove and cool before eating.
