This salad makes you feel great. It is packed with flavour, crunch, looks gorgeous and goes beautifully with fish and pork.
Refreshing orange and fennel salad
2 heads of resh fennel, sliced thinly
2 Tbsp fennel fronds (leaves), roughly chopped
2-3 oranges, peeled and segmented and juice reserved
juice of ½ lemon
pinch sea salt flakes and freshly cracked black pepper
Slice the fennel and place in a large bowl. Add the orange segments and squeeze over any juice from the oranges and lemon juice.
Season with cracked pepper and salt and finish with the fennel fronds. Toss to combine and serve.
