Chef hosting six-part class in sushi-making

Sushi lovers will be in seventh heaven with the launch of a six-part class in preparing the Japanese delicacy led by a top Queenstown chef.

Chef Brendan Downer hosts the "Sushi Hands On Demo and Dinner" class in kitchen and giftware store Mooch, in Remarkables Park Town Centre.

Classes begin tomorrow at 6.30pm.

Mr Downer will teach participants how to buy and prepare fresh fish; cook and season sushi rice; roll and serve sushi; cut and serve sashimi; cook and serve miso soup; and knife skills. There will also be knife-sharpening lesson.

The class dinner menu consists of California rolls made with prawns, wasabi mayonnaise, snow peas and sesame seeds; maki (rolled) sushi made with tuna and cucumber; teriyaki chicken; miso soup; nigiri-zushi made with Akaroa salmon; and sashimi (tuna).

The self-employed private chef, who specialises in personalised menus for private dining and functions, worked as executive chef at the luxury Blanket Bay Lodge, Glenorchy and at Waitiri Creek Winery, Gibbston.

The cost is $85 and includes the demonstration, dinner, sushi mat and chopsticks. Places are limited to 15 people.
