The event, held in the Coal Pit Vineyard in Gibbston on Monday, challenged competitors to prune six vines in 25 minutes.
Organiser Gary Crabbe said Mr Paulin won because of his balance of tidiness and speed.
Mr Paulin, who was "very happy" with his win, then joined Felton Road viticulturists Johannes Gross and Allen Whiting to win the team competition.
Mr Crabbe said the team had the best technique and was the fastest, prunning 20 vines in 20 minutes.
