Spiced cauli

Cauliflower is very versatile and soaks up flavours.  I love simple dishes, such as this one, as they make for a light dinner, wonderful side or a delicious salad.

Serves 4-6

Ingredients
2 Tbsp coconut oil
1 onion, sliced thinly
2 cloves garlic, sliced thinly
2 tsp sambal oelek (chilli paste)
1 cauliflower, broken into florets
1 tsp salt
1 lemon, juice
hot water

Method
Melt the coconut oil in a large fry pan. Add the onion and garlic and cook over a moderate heat until the onion is soft and sweet (about 10 minutes).

Stir through the chilli and add the cauliflower florets.

Season with salt and stir the cauliflower every couple of minutes so it cooks evenly.

Add 2-3 Tbsp water and continue cooking cauliflower for 10 minutes.

Enjoy the cauliflower with a squeeze of lemon or dollop a generous spoonful of unsweetened yoghurt on top.
