James Biggs (29) will compete in the 2015 Young Butcher final and Ben Henry (24) will compete at the 2015 Apprentice of the Year final.
The New World Centre City butchers would go up against butchers from across New Zealand in Auckland on September 10.
The butchers would have about two hours to turn a beef rump, pork loin, a large chicken and a mystery cut to a display of value-added cuts.
The pair will also be assessed on their communication skills in an interview and their knowledge of the trade in an exam.
Mr Biggs, the second-in-command butcher at the Dunedin supermarket, said the skills he used to impress judges at the regional competition included an extensive product and cooking knowledge.
The skill set needed was ''right across the board''.
The grand finals would include the third annual tri-nations butchers' challenge, where the national butchery team - the Sharp Blacks, including Abigail Lane, of Neat Meat Queenstown, and Greg Egerton, of Mosgiel New World - would defend its title against butchers from the United Kingdom and Australia.
''It's the first time that's happened, so it's going to bea big three days,'' Mr Biggs said.
Both men had aspirations to be a Sharp Black one day.
Mr Henry, a second-year apprentice, said butchery appealed because it was a creative and hands-on career and receiving positive feedback from customers was satisfying.
