The Dunedin-based driver of the Tulloch Transport truck was driving down Stone St, Kaikorai Valley, when his truck hit the bridge's guard rail at 7.30am, Sergeant Paul McLaughlan, of Dunedin, said.
The truck ended up on its side with its rear end suspended over a 5m drop to the stream below.
Miraculously, the driver escaped injury, Sgt McLaughlan said.
The truck was carrying a large amount of offal, some of which had fallen on to the road.
The road was closed for several hours while it was cleared and the truck removed.
Tulloch Transport Dunedin manager Peter Sutherland said the driver, who is in his mid-40s, was experienced.
"He is OK, I expect he is having a lie down."
The company worked to clear several hundred kilograms of offal which had fallen from the truck.
No offal ended up in the stream, with the company earning praise from the Otago Regional Council.
Mr Sutherland said the accident had the potential to be "lot worse", and the company would review the incident. Police are investigating.
