Hall Bros Transport general manager Nic McEwan said a crew of five men, using a 20-tonne digger, started demolishing the house in Northeast Valley.
An 84-year-old man escaped the fire with minor injuries on Sunday.
The work was expected to be finished today, Mr McEwan said.
The crew salvaged items from the house including a games console and suitcase of games, cameras and service manuals for cars and motorcycles, for the man.
Fire and Emergency New Zealand East Otago area commander Laurence Voight said the cause of the fire remained ''undetermined''.
The man had an extensive collection of items in the house, including motorcycles and television sets, which ''impeded'' the access of firefighters, he said.
