1kg Colby cheese, either
small cubes or grated
50g butter, cubed
1 cup milk (can be cream if
you wish to get a bit fancy)
32g packet of onion soup
4 eggs
Method
1. Put cheese and butter in a wide pot.
2. Beat the eggs, milk and onion soup mix together and add to pot.
3. Melt ingredients in pot on a low to medium heat while stirring with a wooden spoon to stop mixture sticking and burning. Whisk any lumps with a fork.
4. Allow mixture to cool until a spreadable consistency similar to margarine.
5. Spread mixture on sandwich bread (I have found the budget breads are not great, so worth spending a bit more for a better end result).
6. Roll, cook in the oven, frypan or sandwich press until golden brown and crispy, smother in butter and enjoy.
