Governor's salmon frittata

Ingredients

handful spinach
8 tsp cream cheese
200g sliced smoked salmon
8 eggs
1 tsp crushed garlic
1 tsp salt
1 tsp cracked pepper
1½ cups cream
handful cheese
poppy seeds

Method

Place muffin cases in muffin tin. Cover bottom of muffin cases with spinach.

Add 2 tsp of cream cheese per muffin case. Then 50g of salmon per muffin case.

Place eggs, garlic, salt, pepper and cream in a bowl and mix well. Pour into muffin cases filling to the top.

Top with cheese and poppy seeds.

Bake at 180degC for 35-40 minutes until golden on top.
