A Queenstowner is the vice-world champion in contemporary pizza-making.

Uruguayan Ionatan Dmoch, who moved to Queenstown nine years ago, runs his pizza business, Biga, from a trailer in Shotover St’s Yum Hub.

He made his Bosco pizza in last month’s Caputo Cup world finals in Naples, Italy — the birthplace of the pizza — after winning the New Zealand Caputo Cup’s contemporanea pizza category last year.

The 33-year-old certainly didn’t expect to do so well — "to win number two in the home of the pizza, that’s crazy".

As to why he did so well, "I think it was, like, three simple ingredients — black garlic, which is not really common, fiordilatte [Italian cheese] and mushrooms".

Having originally set up business at Remarkables Market two years ago, he says his secret is "I wake up every day of my life thinking about pizza, thinking what I’m doing".

"I’m in love with what I do, and I’m always learning from other people."
