Pear and oat crisp

This is a simple, healthy version of a crumble.  I have used oats, coconut sugar and coconut oil to create this deliciously sweet and fragrant pie.

Serves 4

4 firm pears, peeled, deseeded

1 vanilla pod or ½ tsp vanilla extract

35g coconut sugar

Topping

100g fine oats

25g coconut sugar

½ tsp ground ginger

60g coconut oil, melted

Method

Heat the oven 200degC.

Slice the peeled pears into 3mm thick slices.

Mix the coconut sugar with the vanilla.

Using a 25cm x 18cm shallow oven dish, layer the pears over the dish and sprinkle with the sugar, then repeat with remaining pears and sugar.

Loosely sprinkle over the oat topping.

Bake for 20-30 minutes or until the pears are bubbling and the topping is golden and crisp.

Allow to cool slightly before eating.

To make the topping

Combine the oats, ginger, sugar and melted coconut oil together in a bowl. Set aside.
