
The Jimmy's Pies shop has been pulled down to make way for a more efficient and modern shop in the front of the Jimmy's Pies factory.
The original shop was built in the 1800s and was attached to a house. Owner Dennis Kilpatrick said the shop and house burnt down in the 1950s and then the rush was on to build another, as the Roxburgh dam was being built.
‘‘It was built in a hurry from scrap timber and concrete - and anything they could lay their hands on,'' he said.
The timber had not been pressure-treated and was starting to rot and the concrete had soft spots in it. The walls were made up of a mixture of things and were all uneven.
‘‘I think they must have used some windows from a demolished toilet block as they had louvres in them like you see in toilets,'' he said.
The new shop will have a larger retail space with refrigerated displays and the back section will have an enlarged preparation area for making sugar buns and scones.
Mr Kilpatrick said the factory at the back had been sealed off while the demolition work was being carried out.
Pies and cakes are still being sold from another shop in Roxburgh. Mr Kilpatrick hoped to have the new shop open by June or July.
