Cake and beer, together at last

University of Otago department of food science research assistant Grace Clare (23) holds a chocolate cake she made from spent grain, a waste product from when the university’s Upcycled Food Lab brewed beer.

The cake had chocolate beer icing and was decorated with hops and made using vegan substitutes.

Miss Clare said besides the cake taking a little longer to bake due to its mixture, it was just like making a normal one.

And it tasted similar to a normal chocolate cake.

The cake was made after the New Zealand Food Waste Champions 12.3 (an organisation which aims to halve food waste by 2030) ran a cake competition to celebrate the organisation’s first anniversary.

The cake had to be made using surplus ingredients from pantries or fridge. A winner has not been announced yet.
